The Company
Palazzigialli srl specializes in the wholesale trade of alcoholic beverages and has been operating in the beverage sector since 2008. The company is headquartered in Senigallia, in the Marche region, in the province of Ancona. The company's vision, Canaja Spirits, embraces a production and marketing philosophy centered on quality, integrity, and passion.
To date, production has started with three different types of products: Amaro Canaja, Canaja Tonic, and Canaja Gin . Our products have been designed and developed to offer their users a wide range of variations, thus offering them versatility and uniqueness. One of our goals is certainly to raise awareness of the use of amaro among mixologists in various hospitality sectors and to expand our brand across various channels to become a point of reference in the current market trend of low-alcohol cocktails as the new frontier of mixology.
In recent years, bitters have expanded their "range of action", gaining an increasingly important place in mixology, where they are used as an alcoholic base or as a flavouring ingredient in cocktails.
The origins of the term Canaja
It was 1450 when Sigismondo Pandolfo Malatesta, under whose rule malarial fevers had significantly reduced the population of Senigallia, decided to give new impetus to the city, which was now in total decline, by promulgating a curious edict.
The idea was to repopulate the city by attracting many people with unfinished business with the law, the Canaja, with the promise of amnesty, and many Jews with the promise of trade concessions. This significant presence, along with the large number of convicts, gave rise to the saying: "Senigallia, half Jewish and half Canaja."
OUR SELECTION OF SPIRITS
BITTER CANAJA
This is the first product in the Canaja Spirits line. Amaro Canaja is characterized by a carefully selected botanicals that give it a complex flavor and enveloping aroma. It has a warm color, and the sweetness is balanced by the fragrances of herbs, spices, and roots, finishing with a slightly spicy note. When mixed, it lends itself as a distinctive element, especially in after-dinner drinks and tiki cocktails, pairing perfectly with tropical fruits or citrus fruits and pairing with soft drinks like tonics and ginger beer.

Canaja Tonic
It features decidedly bitter notes, appealing to those accustomed to bolder flavors. Its ingredients and low alcohol content make it ideal for mixing, especially in classic aperitif cocktails such as Negroni, Americano, Milano Torino, and Spritz. Thanks to its bitterness, it can be served as an alternative to the classic Bitter, making your drinks even more original and unique. We also recommend trying it simply shaken as an aperitif or after-dinner drink to enhance all its sensory qualities and invigorating character.

GIN CANAJA
It has a bold yet delicate flavor. The strong presence of juniper is balanced by the aromas of our expertly selected and balanced botanicals to create a gin with structure and personality. Gin Canaja is ideal for preparing a classic Gin and Tonic, paired with a chilled Indian Tonic. We recommend not using a garnish with your Gin and Tonic, so as not to alter the product's distinctive aromas.
